I’m stepping outside my usual flavor comfort zone for this recipe by using two ingredients that were new to me: garam masala and mango chutney. Garam masala is a classic Indian spice blend you can find in most grocery stores or specialty spice shops such as Savory Spice Shop. It adds warm, aromatic notes that pair wonderfully with savory ground meat and bright herbs.

Mango chutney contributes a sweet-tart contrast that balances the savory spice and soy sauce. I picked up a jar at my regular grocery store and immediately started imagining other ways to use it in both savory and fusion-style dishes.

For the protein you can use ground lamb, ground chicken, or ground pork. In this version I used pork because I enjoy its texture and flavor in quick skillet dishes, though lamb or chicken will work just as well and make the recipe more traditionally Indian in profile.
The full flavor comes from combining the ground meat with diced onion, shredded carrots, chopped cilantro, soy sauce, garlic, ginger, mango chutney, and garam masala. These elements create a bright, layered filling that is delicious spooned into crisp lettuce leaves.

Begin by heating a large skillet over medium heat. Add a tablespoon of vegetable oil or coconut oil, then add the ground meat, diced onion, and shredded carrots. Cook for 5 to 7 minutes, breaking the meat apart with a spatula as it browns and the vegetables begin to soften.

Stir in the chopped cilantro, mango chutney, soy sauce, garlic, ginger, and the garam masala. Cook for another 5 to 7 minutes, stirring occasionally, until the flavors meld and the mixture is heated through. While the filling finishes cooking, prepare a simple spiced mayo to drizzle over the wraps. Combine mayonnaise with a pinch of garam masala and a few dashes of your favorite hot sauce. Allow the meat mixture to cool slightly so it won’t wilt the lettuce. I used Boston lettuce for these wraps; Bibb lettuce or butter lettuce are excellent alternatives because their tender, cup-shaped leaves hold the filling well without being too thick.

- 1 Tbsp vegetable oil (or coconut oil)
- 1 pound ground lamb, chicken, or pork
- 1 onion, diced
- 1/2 cup shredded carrots
- 1/2 cup chopped cilantro
- 1/2 cup mango chutney

- 1 Tbsp garlic paste or minced garlic
- 1 Tbsp ginger paste or minced ginger
- 1 1/4 Tbsps garam masala
- 1/2 cup mayo
- Favorite hot sauce, to taste
- 1 head Boston or Bibb lettuce, separated into individual leaves

Set a large skillet over medium heat. Add the oil, ground meat, diced onion, and shredded carrots. Cook 5 to 7 minutes, stirring and breaking the meat apart until browned and vegetables soften.

Add the chopped cilantro, mango chutney, soy sauce, garlic, ginger, and 1 tablespoon of garam masala. Cook 5 to 7 more minutes, stirring occasionally, until the mixture is well combined and heated through.

In a small bowl combine the mayo, a few dashes of hot sauce, and the remaining 1/4 tablespoon garam masala. Stir until smooth and set aside.

Let the filling cool slightly, then spoon it into individual lettuce leaves. Drizzle with the spiced mayo and serve immediately.
