HOW TO MAKE SHRIMP FAJITAS
Step One – Fry the peppers
- Heat a large frying pan over medium heat. Add the olive oil, then tip in the diced red and green peppers and half of the fajita seasoning.
- Cook the peppers for about 5 minutes, until they begin to soften but still have a little bite and colour.
Step Two – Add the raw shrimp
- Add the raw prawns to the pan and toss them with the peppers so they begin to sizzle.
- Sprinkle in the remaining fajita seasoning, season with salt and black pepper, and stir-fry for 5–8 minutes until the prawns are fully cooked through (smaller prawns cook faster; larger ones may need a little longer).

Step Three – Serve the shrimp fajitas
- Bring the pan to the table and serve with warmed tortillas, guacamole, salsa, shredded lettuce and cabbage, a squeeze of fresh lime juice and chopped coriander. Let guests build their own wraps for an informal, convivial meal.

WHAT TO SERVE WITH SHRIMP FAJITAS
There are many tasty sides that complement seafood fajitas. Pick one or two to round out the meal.
- Spicy rice or lime-and-coriander rice
- Cheesy nachos or tortilla chips
- Seasoned fries or sweet potato wedges
- Corn on the cob
- Chunky guacamole and extra salsas
- A simple Mexican-style pasta salad or a bowl of black beans

INGREDIENT SWAPS AND RECIPE TIPS
Change the base — Use corn tortillas, lettuce leaves for low-carb wraps, or serve the fajita mix over Mexican rice for a bowl.
Add more vegetables — Try sliced onions, zucchini, shredded fennel or a can of drained black beans for extra bulk and fibre. A spoonful of refried beans inside the tortilla adds creamy texture.
Extra toppings — Sour cream, pickled jalapeños, extra salsas, or your favourite hot sauce all work well. Fresh lime wedges always lift the flavours.
Sheet pan option — To simplify further, toss the shrimp and vegetables with seasoning on a large sheet pan and roast in the oven for easy sheet-pan fajitas.
