Roasted Berry and Goat Cheese Popsicles

Sweet and tangy roasted berry and goat cheese popsicles are a refreshing, icy treat that help you beat the summer heat.

It’s mid-July here in Ohio, which means high temperatures and relentless humidity. On days like these I avoid turning on the oven whenever possible and favor no-bake desserts that stay cool. Think no-bake cheesecakes, homemade ice cream and, my personal favorite during sticky weather, popsicles. They’re simple, versatile, and endlessly satisfying when the air is thick and hot.

One of the best things about popsicles is how easy they are to make: blend your ingredients, pour into molds and freeze. The most difficult part is waiting for them to set. My kids enjoy choosing a flavor for the week — sometimes we use pureed fruit for bright, fruity pops, and other times we use yogurt or soft cheese for creamy, indulgent versions.

Last week I had some leftover roasted berry sauce and decided to turn it into a batch of popsicles. I have a soft spot for goat cheese in desserts — its tang pairs beautifully with sugar and honey, creating a charming contrast of flavors. Combining sweet roasted berries with honey-sweetened goat cheese produces popsicles that are both unexpected and delightful.

These roasted berry and goat cheese popsicles blend tangy and sweet in every bite. The goat cheese is smoothed with milk, honey and a hint of vanilla and cardamom, creating a rich, creamy base. Swirled with roasted berries, the result is a pretty striped pop with bright fruit flavor and a satisfying, slightly tangy finish. They’re one of the simplest and most refreshing ways to cool down — second only to a very powerful air conditioner.

Roasted Berry Goat Cheese Popsicles

Ingredients:

EQUIPMENT
3 oz popsicle molds

INGREDIENTS
1 cup milk
4 ounces goat cheese
3 tablespoons honey
1/8 teaspoon ground cardamom
1/4 teaspoon vanilla extract
1 recipe roasted berry sauce (about 1 to 1 1/2 cups)

DIRECTIONS

Directions:

Gently warm the milk, goat cheese, honey, cardamom and vanilla in a small saucepan over medium-low heat. Whisk constantly so the goat cheese melts smoothly into the milk; the goal is a uniform, slightly warm mixture without boiling. Remove from the heat and allow the mixture to cool to room temperature, then chill briefly if you prefer colder filling before freezing.

To assemble the popsicles, spoon a scant tablespoon of roasted berry sauce into the bottom of each mold. Add milk-and-goat-cheese mixture until the molds are about halfway full, then add another small spoonful of berry sauce. Finish filling the molds with the remaining milk mixture, leaving a little room at the top for expansion. Insert sticks and freeze according to the mold manufacturer’s instructions, typically 4–6 hours or until fully set.

To unmold, run warm water briefly over the outside of the molds or let them sit at room temperature for a minute; gently pull the pops free and enjoy. The combination of creamy, slightly tangy goat cheese and bright roasted berries makes for a sophisticated yet simple frozen treat.
